Characteristics of the grape, like its tannicity and its aromatic component, as well as historical traditions of cultivation, result in diverse typologies of wine from the same cultivar, which are capable of exalting diverse characteristics of the grape. In our territory, Dolcetto has developed two different types of wine whose desired characteristics depend first on the chosen vineyards and then on what happens in the cellar, through different wine-making techniques and ageing processes. Thus Dogliani DOCG gives us a fresher interpretation that exalts the primary fruit, boasts easy drinkability and is aimed at immediate consumption, while Dogliani Superiore DOCG offers a more concentrated wine, which is spicier, has nuances of undergrowth, and is able to age.
